
Ludwig Hiedler runs his 18ha of vineyards in Kamptal on near-natural lines to maintain the ecological balance. He cultivates typical grape varieties such as GrünenVeltliner, Weißburgunder (Pinot blanc) and Riesling. In a Decanter Riesling tasting in October 2004, the latter was awarded three stars as being particularly true to type and commendable.

Grape pomace (pulp and skins) and mulches of straw, green manure and wild herbs are used to regenerate the soil. In the vineyard the natural enemies of vine pests and manual care ensure healthy plants.
At the heart of the estate is a cellar embedded in loess eight metres below ground. Here the wines are kept in optimal conditions – constant cool temperatures with stable humidity levels – guaranteeing ideal ageing and storage. Depending on type and quality, the wine is bottled at between four and 36 months. The decisive criteria determining the bottling date are high atmospheric pressure and a rising moon.
